Our favorite summer dessert


Avocado Crema & Fruit Parfait

I had this dessert at a friend's dinner party and absolutely loved it. She told me she sampled it at a recent trip to Whole Foods and picked up the recipe there. I hunted around for it online but came up empty handed. So I just improvised this version instead... and I still love it! And get this, it's delicious, takes 10 minutes to make, requires NO baking, and it's actually good for you! Shocking, right?

I happen to have a bunch of 4 oz. mason jars so decided that would be a cute way of serving it. But it could also be layered into a larger serving dish like a casserole or pie plate. I topped mine with fresh strawberries but blackberries and blueberries work great too. We hope this recipe becomes a staple in your kitchen as it has in ours!

Ingredients

1 avocado

2 cups whole milk greek yogurt

1/4 cup honey

1/2 tsp vanilla extract

pinch of salt

1 1/4 cups of your favorite granola

2 cups of sliced strawberries (or berries of your choosing)

2 tbs fresh lemon juice

2 tsp sugar

Directions

Combine avocado, yogurt, honey, vanilla and salt in a food processor and blend until smooth. Pour granola into the bottom of your serving dish so it is about half an inch thick. If you are using 4 oz mason jars, that's equal to about 2 tbs of granola per jar. Spoon yogurt mixture into your serving dish, leaving enough room to top with fruit. In a separate bowl, combine fruit, sugar and lemon juice and stir. Give the berries a minute or so to macerate in the lemon juice. Spoon berries on top of yogurt mixture. Serve chilled and Enjoy!

Recipe makes approximately 10 servings.
